They do this in two ways: by reducing acetaldehyde levels and by scavenging oxygen, to ensure that original content quality is maintained.   Oxygen scavengers (AA) also help reduce the risk of inferior product quality due to oxygen ingress and can be tailored to suit shelf life requirements.
